Totally Awesome, Totally Vegan “Cheese” Sauce

I got the idea for this from my fellow Orthodox blogger at Oh, She Cooks!, who makes tahini based nacho sauce. 

Totally Awesome, Totally Vegan “Cheese” Sauce

Ingredients:

  • 1/4 cup unsweetened nut or seed butter (I use sunflower seed butter – cashew or tahini would also be great)
  • 1/2 cup water
  • 1/4 tsp each: salt, turmeric, paprika (smoked, hot, or regular), garlic powder
  • 2 tbsp nutritional yeast

Method:

Combine nut/seed butter and water in small pot over medium heat. Stir until they begin to combine. It will look lumpy and curdled until it starts to simmer, but will get smoother as it warms up. Add spices. Simmer a minute or two, until it looks like a  smooth gravy. You can always add more water to thin or simmer longer to thicken. Adjust seasonings to taste. This recipe makes enough for two pizzas, or one whole recipe of Vegan Pizza.

I made this sauce to go on my Vegan Pizza, but it is equally awesome with a squeeze of fresh lemon juice and some fresh herbs drizzled over steamed veggies. Or mixed with salsa as a dip for chips. Or as sauce for vegan nachos. Or spooned into bean burritos. Or any other way you can think of to use it. And it doesn’t just taste awesome. The sun butter and yeast mean that this sauce gives a nutritional boost to everything you use it on, with good fat, protein, and important trace minerals in every bite!

    • I guess I didn’t have any choice. My daughter is allergic to sesame seeds, so I started using cashew butter everywhere I used to use tahini. Then she developed an allergy to cashews. 😦 Sunbutter is awesome, though, if you have never tried it. One of the highest in trace minerals and protein.
